The Centro de Aromas y Sabores has developed a testing protocol that allows us the chemical, physical, and aromatic deconstruction of the sensory characteristics of a food product. This deconstruction makes it possible to identify all chemical compounds that are responsible for the main aromatic attributes of a particular type of food. Once characterized, the food is constructed considering the key aspects that characterize it. The results are evaluated by trained sensory panels and consumer panels to the customers needs.
